I made them with my husband's home-grown no name chilies and omitted the cilantro. Delicious!

125cups All-purpose flour; wheat flour Tpye 550
140cups Yellow cornmeal, preferably stone-ground
45tablesp. Sugar
1tablesp. Baking powder
1 1/2teasp. Chili powder, or more to taste
1teasp. Salt
1/2teasp. Baking soda
1/4teasp. Black pepper;freshly ground
250grams Buttermilk
115grams Unsalted
   Butter, melted and cooled
1large Egg yolk; 20 g
164grams Corn kernels (add up to 30 g more if you'd
   -- like)fresh ), frozen or canned (in which case,
   -- they should be drained and patted dry)
1small Jalapeno pepper, seeded, deveined and finely
   -- diced
1/4  Red bell pepper, seeded, deveined and finely
   -- diced
2tablesp. Finely chopped fresh cilantro

Yahh For Savory Muffins

I like savory muffins. The sweet from the corn and the slight heat from the pepper must be a great combination here. Love the way you served them!

Very original recipe

This recipe goes beyond my comprehension, chili powder and Jalapeno. I just must try it.
