Dienstags mit Dorie: Crème brûlée

Das Rezept dieser Woche hat Mari von Mevrouw Cupcake von Seite 393 aus Baking: From my home to yours ausgewählt: Crème brûlée.

Ich besitze einen Gourmetbrenner, der lange nicht zum Einsatz kam, obwohl die Küche jetzt - im Gegensatz zu der alten - Gourmetbrenner sicher ist. Dories Rezept unterscheidet sich nicht wesentlich von anderen Rezepten. Allerdings finde ich die Zuckermenge in der Crème etwas zu hoch bemessen. Dorie hält Förmchen von 10 cm Ø und einer Höhe von 2,5 cm für ideal. Ich habe Glasschälchen von 8 cm Ø und einer Höhe von 3 cm befüllt.

Und wie immer das beste zum Schluss: Durch Klopfen mit dem Löffel die knackige Karamellschicht durchbrechen und dann beides genießen ....

60Gramm Zucker
3  Eigelb Größe M, 51 - 60 g
2Teel. Vanilleextrakt
300ml Sahne
120ml Milch
90Gramm Brauner Zucker

Zubereitung

Sahne und Milch aufkochen. Eigelb, Zucker und Vanilleextrakt gut verrühren, aber nicht schaumig schlagen. Etwa 1/4 der aufgekochten Milch unter die Eigelbmischung geben und verrühren. Danach den Rest der Sahnemilch unterrühren. In ofenfeste Förmchen füllen und in den auf 90 °C vorgeheizten Backofen schieben.

Die Garzeit beträgt etwa 50 - 60 Minuten, ohne Wasserbad. Vor dem Karamellisieren die Crème mindestens drei Stunden durchkühlen lassen.

Tipp: Den Brenner nicht auf volle Leistung stellen, sondern sanft brennen!

I totally agree. The best part of eating a creme brulee is breaking through the crystallized sugar coating. YUM.

Your brulee looks lovely! I don't have a working blow torch so I just used my grill and it turned out pretty good. I think this was my favourite recipe yet!

My favorite part of creme brulee is the custard, not the sugar crust! And thank you for the comment about decreasing the sugar in the custard.

Your creme brulee is beautiful! That sugar layer is absolutely perfect; I had trouble with that part. But it is a delicious recipe. And I agree with you about decreasing the sugar. And vanilla pods would be yummy and accurate. Thanks for your help with the brown sugar advice for my daughter. She is going to look again in a different store.
