Dienstags mit Dorie: Schokoladen Pudding

Das Rezept dieser Woche hat Melissa von Its Melissas Kitchen von Seite 383 aus Baking: From my home to yours ausgewählt: Chocolate Pudding. Das Originalrezept ist hier zu finden (click).

Dorie Greenspan benutzt für die Herstellung einen food processor, der lt. diesem Kommentar eine ziemliche Kleckerei hinterlässt. Abgesehen davon, besitze ich auch gar keinen food processor, so habe ich mit diesen Hilfsmitteln den Schokoladenpudding auf althergebrachte Art und Weise hergestellt:

So ähnlich steht es auch auf den "Tüten": Stärkemehl mit dem Kakaopulver und einem Teil des Zuckers mischen, nach und nach mit 6 EL kalter Milch glattrühren. Ich habe das mit oben abgebildeten Teil gemacht und gleich das Ei und die Eigelbe untergemixt. Die übrige Milch aufkochen, von der Kochstelle nehmen und angerührtes Pulver einrühren. Pudding unter Rühren mindestes eine Minute kochen. Die geschmolzene Schokoladen-Butterschmalzmischung unterrühren. Entweder liegt man Frischhaltefolie auf die Oberfläche des Puddings oder rührt ihn regelmäßig bis zum Erreichen einer Temperatur <40 °C um, so wird das Ausbilden der Haut verhindert. Für einen gewissen Crunch habe ich noch einen Esslöffel Kakao-Nibs untergerührt.

ist viel gehaltvoller als diese Version, aber auch umwerfend lecker!

That's such a great tip for preventing a pudding skin, that way none gets wasted from the plastic wrap. I have to admit that I love pudding skin though!

You didn't miss anything by not having a food processor--it was just one more thing for me to wash. I like the idea of adding nibs. I thought about doing that, but wasn't sure my kiddos would eat it that way.

Lovely pudding!

Your chocolate pudding looks wonderful - I like knowing that you can make it without all the equipment. I have seen the Dr. Oetker products in my US supermarket and wondered if it is some special thing that expatriate Germans love to have...or is it basically instant pudding?

Your pudding looks wonderful and I like the addition of the hazelnuts. I got used to eating hazelnuts like that while living here in Lebanon and I know those went really well with the pudding. I look forward to your post next week!
