SHF Mmm... Canada - Nanaimo Bars

Canada sweet Jennifer the Domestic Goddess asks: How sweet is Canada? for this month's edition of Sugar High Friday.

Our last vacation before parentship we spent in Canada. We saw our first black bear picking wild berries in one of Albertas beautiful National Parks, obviously a sweet tooth. And we came into touch with Nanaimo Bars, not in the City of Nanaimo but anywhere on Vancouver Island. It was love on first taste.

Canada is sweet as Nanaimo Bars, the taste of these brought back pleasant memories from vacationing in Canada.

The easiest thing was using the European style culturated butter, but no graham wafers in Germany. I think the lady fingers were a proper substitute.

Ingredients

H BOTTOM LAYER
115grams Unsalted butter (European style cultured)
1/4cup Sugar
25grams Cocoa
1  Egg beaten, 50 grams
105cups Graham wafer crumbs*
1/2cup Finely chopped almonds
90grams Coconut, desiccated, flaked
H SECOND LAYER
115grams Unsalted butter
40ml Cream
2tablesp. Vanilla custard powder
100grams Icing sugar
H THIRD LAYER
120grams Squares semi-sweet chocolate
30grams Unsalted butter

Directions

Bottom Layer

Melt first 3 ingredients in top of double boiler. Add egg and stir to cook and thicken. Remove from heat. Stir in crumbs, coconut, and nuts. Press firmly into an ungreased 20 cm x 20 cm pan.

Second Layer

Cream butter, cream, custard powder, and icing sugar together well. Beat until light. Spread over bottom layer.

Third Layer

Melt chocolate and butter overlow heat. Cool. Once cool, but still liquid, pour over second layer and chill in refrigerator.

This recipe for Nanaimo Bar (Official) serves/makes 24 bars.

* I used 13 ladyfingers

Sweet!

memories for us as well, travelling through Canada with a 1 yr old. So much time past.
Never had Nanaimo bars though, they look great. I really must try!

Hört sich sehr lecker an. Optisch erinnern die Bars finde ich etwas an Donauwellen. Die mag ich auch sehr.

Welcome, honourary Canadian! I too loved B.C. when I visited, I think it is the most beautiful part of Canada. Your Nanaimo bars look lovely. Very clever to use lady fingers.
