Diese Woche hat Caroline von A Consuming Passion das Rezept von Seite 290 - 292 aus Baking: From my home to yours ausgesucht: Brandteigring mit Pfefferminz-Sahne und Schokoladenglasur. Dorie wurde dabei vom Klassiker Paris-Brest inspiriert, der wie ein Rad geformt und nach dem Radrennen Paris-Brest benannt ist. Sarah Wiener musste dieses Gebäck zum Abschluss ihrer Kulinarischen Abenteuer in Paris herstellen. Anstatt mit einer "schweren" Creme wird der der Brandteig mit einer Pfefferminz-Sahne gefüllt.©Krause Minze

Das Rezept ist auch ohne Küchenmaschine relativ einfach herzustellen: Ich habe das Rezept halbiert und den Teigring mit einer Plastiktüte, die ich an einer Ecke zu einem Durchmesser von ca. 2 cm aufgeschitten habe, auf das Backblech gespritzt. Zum Aromatisieren der Pfefferminz-Sahne habe ich 20 Blätter meiner krausen Minze verwendet. Die Sahne am besten am Vortag zubereiten.

Meine Herren stehen auf die Kombination Pfefferminz und Schokolade, ich nicht so sehr, es hat mir aber trotzdem geschmeckt.

As far as making the choux by hand, well... you must be a lot better at it than I am, and probably have an arm of steel! I could never succeed without a mixer.

I think I like choux pastry with whipped cream a bit more than with pastry cream. Glad yours was well recieved.
