You Scream, I Scream, We All Scream for Dried Apricot-Pistachio Ice Cream
Mike of Mikes Table calls for Frozen Desserts. The last weeks were warm and sunny in Northern Germany and I've already served Fior di Latte Ice Cream, Oreo-Cookie Ice Cream and Lemon Yoghurt Ice Cream. Today we had Delicious and refreshing. This is my entry for Mike's Frozen Dessert Event.

| 140 | Gramm | Dried California apricots, quartered | |
| 180 | ml | White wine, dry or sweet | |
| 70 | Gramm | Shelled unsalted pistachio nuts | |
| 130 | Gramm | Sugar | |
| 500 | ml | Half-and-half | |
| 1 | Wenige Drops freshly squeezed lemon juice |

Zubereitung
In a small saucepan, warm the apricot pieces in the wine. Simmer for 5 minutes, cover, remove from the heat, and let stand for i hour. Coarsely chop the pistachio nuts. Puree the apricots in a blender with the sugar, half-and-half, and lemon juice until smooth. Chill the mixture thoroughly in the refrigerator, then freeze it in your ice cream maker according to the manufacturer's instructions. During the last few minutes of churning, add the chopped pistachio nuts.
