Amanda of slow like honey has chosen Bill's Big Carrot Cake on pages 253-255 from Baking: From my home to yours. After my experiences with Dories Perfect Party Cake and the lack of three 9 " baking tins I halved the recipe and made cupcakes. They came out very juicy, we liked them. I'll definitely make these cupcakes again.
