Wow, this looks great

I am so glad I bought this book. All the recipes I've seen posted from it look so great. I had initially dismissed this bread; I hadn't realized it used soybean sprouts. I am planning to try and make it soon (together with the 700 other breads I "want to try soon"...).
Thanks for the information about the type 1400 flour. I knew that I could pretty much replace type 550 with AP flour. It's good to know that I can approximate type 1400 flour with a mixture of whole-wheat flour and all purpose flour.
