SHF #38 - The proof is in the Pudding
Zorra chose "The Proof is in the Pudding" for the 38 th edition of Sugar High Friday. The epitome of pudding for me is steamed or boiled pudding and I adore poppy seeds. So I preparedIn default of fresh cherries I used canned morello cherries. A great combination, the kids asked me to do it again.

| 1 | pack | Vanilla sugar | |

Directions
1 . Soak poppy seed mixture for a while, than mix with bread crumbs, lemon zest, a pinch of salt. Whisk butter, sugar and egg yolks until foamy, add to the poppy seed mixture and gently fold in.
2. Beat egg whites with vanilla sugar until stiff. Fold into the poppy seed mixture. Butter some cups or individual pudding tins.
3 . Half fill a pan with water. Preheat oven to 180° C. Pop in the pudding tins and cook for about 35 minutes.
4. Wash cherries and remove pit. Cook with 1 tablespoon suger and some lemon juice for about 4 minutes. Remove puddings from oven, cool , turn on plates and serve with the compote.
* alternate: 80 g ready poppy seed mix
