Hay, Hay Donna Hay #13: Lime Mint Sorbet
Very refreshing and delicious! To prevent the sorbet for melting too quick I served it in an ice bowl.

Ingredients
| 200 | ml | Water | |
| 80 | grams | Sugar or more to taste | |
| Handfull fresh mint | |||
| 100 | ml | Fresh lime juice; about 2 to 3 limes |

Directions
In a small saucepan combine the sugar and water, bring the mixture to a boil, stirring until the sugar is dissolved, and remove from heat. Let syrup cool. In a blender puree mint and syrup. Stir in the lime juice, and transfer mixture to a bowl through a fine sieve. Let chill, covered until cold, about 1 hour. Freeze according to instructions of your ice cream maker.
If you don't own an ice cream maker, transfer to a shallow freezing container and freeze covered for 5 to 6 hours at - 18°C. Stir with a fork every now and then to bring the frozen layers inwards. Warm for 10 minutes in the fridge before serving.
