Title: Courgette fritters with tomato and mozzarella

Yield: 4 Servings

Ingredients

1large Red chilli, finely chopped
125grams Self-raising flour
   Red onion, peeled and finely chopped
2large Eggs
1teasp. Cumin seeds
125grams Cherry tomatoes, quartered
100grams Mozzarella, diced
1  Handful of basil
1/2  Lemon, the juice
3medium Courgettes, grated
4tablesp. Olive oil for frying

Directions

Mix cherry tomatoes with mozzarella, a handful of basil leaves and the juice of 1/2 a lemon.

Mix the courgette, onion, spices, flour and egg together. Season. Heat 1 tbsp oil in a non-stick frying pan, drop in heaped tbsps of batter. Cook, in batches, for 2-3 minutes each side or until golden and cooked through.

Serve with the tomato and mozzarella.

I hate pests

Sorry to her something is eating your herbs. I hate garden pests. Something is eating my basil too, but for some reason it doesn't eat the Thai basil. This sounds delicious, and your method of hanging up the basil to keep it away from the snails is quite clever!

I'm sorry to hear that your herb patch has been beseiged with pests, but thankfully you were clever enough to rescue your basil this way, and as a result share this dish with us!

Courgette fritters is one of my mother's most successful tricks to get my supposedly courgette hating niece and nephew to eat them. She calls them simply fritters :-) and served them with a basic tomato sauce.

Schade, dass mit den Kräutern. Meine gedeihen in diesem Jahr trotz der Hitze super.
Das Rezept wird sicher einen Stammplatz in meiner Küche erhalten, weil ich Zucchini über alles liebe. :)
