Capers & Trout Muffins - Forelle-Kapern-Muffins

The classic combination of trout, lime and capers in a muffin!

Ingredients

H DOUGH
130grams Flour
1/2pack Baking powder
1pinch Baking soda
1  Egg size M
40ml Olive oil
125grams Plain yogurt
H FILLING
125grams Trout filet, smoke
1small Jar capers, about 30 g grams
1teasp. Mixed herbs, chopped
1teasp. Olive oil
1tablesp. Crème fraîche
1dash Lime juice
H TO SERVE
1  Lime

Directions

1. Preheat oven to 190° C/fan 175° C/gas mark 2. Grease or place paper-liners in 6 muffin cups.

2. In a large mixing bowl stir together flour, baking powder and soda. Set aside.

3. In a bowl mash trout filets with a fork. Drain capers add on and mix with crème fraîche, lime juice, herbs and oil until all comes together.

4. In a small bowl, lightly beat the eggs; add oil and yoghurt. Pour into dry ingredients and stir just until moistened.

5. Spoon half of the batter into the greased or paper-lined muffin cups. Divide capers-trout mixture into 6 parts, form small balls and place in the center of each muffin. Spoon remaining batter over the mixture. Bake for 30 minutes backen. Let cool on wire rack 3-4 minutes, then remove muffins from pan and cool completely on wire rack.

6. Serve each muffin with a quarter of lime slice.

Definitely unusual ingredients! But the sound and look delicious!
Anything with capers and smoked fish has to be good!

Wow! Now that is an unusual combination! But it sounds wonderful and I love that the fish is contained in a layer in the middle. Do they keep well? So inventive too!
