340 grams Shortcrust pastry, 12 oz
Salt
Pepper
230 grams Bacon, chopped, 8 oz
30 Butter, 1 oz
6 large Eggs

An excellent pie that is always a favourite for a summer picnic.
Set oven to 205 °C/400°F or Mark 6. Roll out just over half (190 g) the pastry and line a 24 cm/9 inch pie dish or deep flan tin. Melt the butter in a frying pan and cook the bacon gently until just coloured. Drain well and arrange on the base of the pastry. Break the eggs on to the bacon, placing 5 around the edge and I in the centre. Tilt the dish so that the whites meet. Add a sprinkling of salt (omit this if the bacon is salty) and pepper. Roll out the
remaining pastry and cover the pie, sealing the edges well. Glaze with beaten egg or milk and bake for 25 minutes then reduce the heat to 160°C/325°F or Mark 3 and bake for another 15 minutes.
Serve cold cut into slices.
